Minestrone Soup

cheap and healthy filling soup



  • 1 courgette diced
  • 1 onion diced
  • few new potatoes diced
  • tin chopped tomatoes
  • 1 clove garlic crushed
  • 1 tin canelleni beans drained and rinsed
  • 4 chicken or vegetable oxo
  • 1 tablespoon tomatoe puree
  • 2 carrots diced
  • handful green beans chopped
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 2 litres boiling water
  • cooked fusilli pasta boiled and drained and set aside (optional)
  • parmesan cheese (optional)


fry all the vegetables and garlic in olive oil for five mins

add the chopped tomatoes, water, oxo cubes, salt and pepper and tomato puree

simmer for 30 mins and serve

serve with the cooked pasta at the bottom of the bowl to make a filling meal and sprinkled with parmesan cheese if desired
