fry all the vegetables and garlic in olive oil for five mins
add the chopped tomatoes, water, oxo cubes, salt and pepper and tomato puree
simmer for 30 mins and serve
serve with the cooked pasta at the bottom of the bowl to make a filling meal and sprinkled with parmesan cheese if desired
