Spicy Red Lentil Soup

Wholesome heart warming soup



  • 150g Red lentils
  • 1 tin of chopped tomatoes (drained- empty into seive and water down)
  • 1 tbsp Chilli powder
  • 1 finely chopped onion
  • 1 grated courgette
  • 1 grated carrot
  • 3 pints of vegetable stock


Serves 4: Prep time 10 mins: Cooking time 1hour 10 mins

1)Add onion, grated carrot and onion plus chiili powder to a large deep pan

2)Add a splash of the veg stock to the pan and cook gently for 5 mins stirring continuously

3)Add in drained chopped tomatoes, stir and then add in lentils

4)Stir well making sure lentils are distributed evenly throughout mixture

5)After a minute or two of stiring add in the stock and leave to boil (turn heat up)

6)Once boiling immediately reduce heat to simmer (lowest setting)

7)Stir once then cover with lid

8)Leave to simmer for 1 hour

9)After one hour take the soup off the heat and blend with a blender (hand held/ machine) until smooth

10)Ladel soup into 4 bowls and serve with wholemeal bread and season with pepper
