Sunshine Soup

For a dull day



  • 1 while butternut squash - chopped into 1 inch pieces, peeled and de-seeded.
  • 2 large carrots, chopped into 1 inch chunks.
  • 1 large onion
  • 2 pints of chicken/veg stock (depends on you really)
  • glug of oil
  • salt and pepper


use a lrg saucepan

fry onions until soft and translucent

add carrots, butternut squash and heat through for 10 mins.

pour on the 2 pints of made up stock

simmer for half an hour


add cream if you wish

blend in a blender or with hand blender
