Tomato And Basil Soup

Homemade tomato & basil soup, quicker to make than popping to shops!



  • 1 tin peeled plum tomatoes
  • 2 pints water
  • 2 tbsp tomato puree
  • 1 onion
  • 1 large potato
  • 3-4 cloves garlic
  • 2 tbsp olive oil
  • small handful of fresh chopped basil
  • salt and pepper
  • 1/4 tsp red chilli flakes (optional)


1) peel and chop onion and garlic

2) heat oil and fry onion and garlic until soft

3) peel and chop the potato

4) add water to pan, add potato and bring to boil

5) once boiling, add tinned tomato, tomato puree, stir and simmer until potato is cooked

6) add the chopped basil leaving some for garnish

7) blend the mixture and season to taste

8) garnish with basil and serve with fresh bread

    Great stuff kinda western style. Sadly my parent wont let me make it coz i can jus go and buy it lol
