Chunky vegetable soup

Ingredients

  • 2 Carrots
  • 1/2 Turnip/Swede
  • 1 Leek
  • (any other veg you want/have - try parsnip, sweet potato, celeriac, mushrooms)
  • 1 Sml Onion
  • 1 clv Garlic
  • Veg Stock
  • Butter
  • Salt and Pepper

Method

1)Peel and Dice up veg, as chunky as you want the soup, but finer works better.

2)Heat about 1 tbsp butter in a large pan.

3)Add all veg and soften for about 5 minutes, stirring.

4)Add veg stock/water to cover the veg by a good inch.

5)Season well.

6)Bring to boil, reduce heat and simmer for 30-45mins/until veg is cooked.

(blend and return to heat if desired - or just leave chunky)

    Has any one actually tried this exact soup and did you think it was tasty or was it abit bland, too filling etc thanks :)

    Try adding bits of pasta to the soup to make it a bit more a meal. Those tiny shapes u can buy are good or just straight spaghetti broken up. Add in the last 10 mins of cooking :)

    cook some lentils first b4 adding the rest and it thickens it up and adds flavour
