Well Easy Bacon Soup

Published Monday, 21 January, 2013 by Sarah Andrew

Very easy and taisty, but made easier by a slow cooker or casoroldish.

  • A sweed
  • carrot
  • parsnip
  • onion
  • 1 cup red lentils
  • 400g (ish) unsmoked bacon (bacon bits is good for this but if you cant get them just cut it up)
  • white pepper and salt to season

Peel and chop up all the vegetables and put in pan/slow cooker.

add bacon bits and enough water to cover the vegetables leave to simmer until everything has softened and then mash everything up. If you are not using a slow cooker putting in an oven at a low heat may be a good idea. You could also roast the vegetable first as well.

season to taste with salt and pepper

This isn't soup, it's veggies floating in water

By the way, it took me just longer than an hour, if anyone's curious :)

I used this recipe in school for my catering (cooking) class. I've made it twice. Very happy with the result! Although i did leave the swede out and i don't think it was necessary anyway. Delicious though!
