STEP 1:

masala
pickle

-in a bowl mix the veggies with the pickle masala or gravy of any pickle.

STEP 2:

-in a pan heat some oil.

STEP 3:

mustard
mustard seed

-add some mustard seeds,asafoetida and then add the veggies and stir it well.

STEP 4:

-cover it with a plate and add water over the plate and allow to cook for some time.

STEP 5:

-once cooked well add some salt and stir well.

STEP 6:

-if you wish to make it a gravy dish you can add some water to it and cook.

note-you can use any veggies you want.If you do have leftover veggies in small quantity this is a good way to use them up.Also its a nice way to use up the leftover pickles.
