Crispy Roast Potatoes

Ingredients

  • A bag of medium sized potatoes
  • Oil
  • Butter
  • Salt
  • Pepper

Method

Firstly peel and half the potatoes. Place in a pan of salted water and bring to the boil. Simmer the potatoes until you can just slide a sharp knife into the centres. Whilst simmering the potatoes pre-heat an oven to 200 degrees and place a tray with shallow oil in the bottom. In another saucepan melt some butter. Once the potatoes are boiled, drain and then shake them in the pan to rough the edges. Place the potatoes carefully in the roasting tray, pour over the melted butter and season well with salt and pepper. Place in the oven for about 40 minutes (or an hour) turning regularly.
