Grilled Vege Cous Cous

  • 1 Courgette
  • Mixed Peppers
  • Red onion
  • 2 tbsp olive oil
  • Packet of Cous cous
  • 8 dried and ready to eat apricots
  • 1 tbsp fresh corriander
  • 1/2 lime


1) slice the courgette into thin strips. Quarter, core and deseed the peppers.

Skin and cut the onion into wedges and brush them with a little of the oil. Cook all the vegetables on a gridle pan on the hob until softened.

2) prepare the cous cous according to the pack directions. Quarter the apricots and finely chop the coriander.

3) Stir the vegetables, apricots, corriander and the remaining olive oil into the cous cous. Add a good old squeeze of lime juice.
