Peanut Rice (khao Pad)

Ingredients

  • I make for my family (3 people) adjust up and down based on the number of people.
  • 6-8 cups of plain rice
  • 3 large onions
  • soy sauce at least one cup, more or less is fine i prefer more
  • 1-2 tubs of peanut butter, very flexible with ingredients i know but it works with more or less.
  • 3 eggs
  • garlic and chilli (whole clove and 3 chillis)
  • salt and pepper to season

Method

Cook the rice and leave to one side.

fry the garlic, chillis and onions until soft but not brown and then add the eggs towards the end.

add the soy sauce and peanut butter to the rice along with contents of the frying pan.

mix well and warm on a low heat for 5-10 mins.

    This looks like a very interesting recipe; i'd love to try it. How much peanut butter do you need for it? Tubs vary in size, so it would be helpful knowing how many grams is required, or even what size the tubs should be (small/ medium/ large?)
