Cook 1 portion of boil-in-the-bag rice according to the packet instructions. Meanwhile, finely chop a small onion and half a red pepper. Heat a little olive oil in a pan and add the onion. Fry for 2-3 minutes. Add the red pepper, a handful of frozen sweetcorn, and soy sauce to taste. Fry for a further 3-4 minutes, until the sweetcorn is cooked through and the onions are soft. Stir the vegetables into the rice and add extra soy sauce if required. Enjoy!
