Quick Veggie Pasties (serves 4)

Ingredients

  • 375g(12oz) Plain Flour
  • 125g (4oz) Butter, softened and cut into cubes
  • 200g (7oz) Danish Blue Cheese, Grated
  • about 4 tblespoons Water
  • FILLINGS:-
  • 175g (6oz) Carrots, coarsely Grated
  • 250g(8oz) Potatoes, cut into cubes
  • 175g (6oz) Onions, finely chopped
  • 25g (1oz)Danish Blue Cheese, grated
  • 1 1/2 teaspoons dried mixed herbs
  • 3 tablespoons vegetable stock
  • salt and pepper

Method

1) Heat the oven to 200°C (400°F), Gas Mark 6.

2) Pour the flour into a large bowl and rub in the butter with your fingertips until it is mixed well. Stir in the cheese, make a hole in the centre and mix in enough water to give a soft but not sticky dough. Knead the dough lightlty and divide into 4 equal pieces. Roll each one out on a lightly floured surfaces and cut to an 18cm (7inch) circle (you could use a small plate as a guide)

3)Mix together all the ingredients for the iling then divide the mixture evenly among the pasties. Lightly dampen the edges of the pastry and pull them together to meet in the centres, pressing well to seal in the filling.

4) Place on a baking sheet and cook in thr oven for 20mins. Turn down the heat slightly and cook for another 15-20mins.
