1. very finely chop the onions and the peppers
2. fry the onions in a little olive oil, add the herbs and spices
3. add the peppers and fry til soft
4. add the tinned tomatoes, bring to boil, then gently simmer for about 5 minutes
5. pour into a bowl and chill in the fridge.
