Veggie Bean Chilli

Ingredients

  • Tin Kidney beans
  • olive oil
  • half a large onion (or 1 small/medium)
  • red pepper
  • handful sweetcorn
  • 8 - 10 mushrooms
  • serving of green beans
  • 1/3 tube tomato puree
  • tsp garlic puree
  • tin of chopped tomatoes
  • 1 tsp cumin
  • 1tsp chilli powder

Method

fry a chopped onion in the oil with the garlic until soft

add the red pepper and cook for 2 mins before adding the rest of the vegetables.

cook for about 5 mins.

add the rest of the ingredients

bring to the boil

then simmer for about 30 - 45 mins to let the flavours infuse.

serve with rice
