Chicken And Broccoli Casserole
By John
Ingredients
- 2 chicken breasts(or pre cooked sandwich chicken)
- A large head of broccoli
- Curry powder
- Mayonaise
- 1 pint of milk (wont need all of it tho)
- 1 can of condensed chicken soup
- Bread cumbs
- Cheddar cheese
Method
1) cook chicken (if u buy raw chicken) and cut into small pieces along with the broccoli
2) in a seperate bowl, empty contents of can + a can full of milk,
3) add in a tea spoon of curry powder, and a table spoon of mayonaise and mix it all up (good'n proper)
4)put chicken and broccoli into caserole dish and pour mixture over
5) grate up some cheese mix with breadcrumbs and put on top of the mix
6) cook for about 30 minutes until cheese on top is melted (the broccoli will cook in the sauce and should be nice and cruncy after the 30 mins)
best with spuds, but still good with pasta

Marvelous recipe, got us through some long, cold nights at university. I find that i have to add an extra can of soup, an extra can's worth of milk, an extra dollop of mayo and an extra teaspoon curry powder to produce enough sauce to really percolate through the chicken and broccoli, but truly solid stuff.

Not enough sauce to even half cover the chicken and brocolli. I had to add a load more milk, hope it tastes good still..........
