Spongy Muffins With A Hint Of Spam. YUM

Ingredients

• 10g Butter.
• 1/2 Red Onion Fiercely Chopped.
• 200g Plain Flour.
• 1/4 Tsp Salt.
• 1tsp English Mustard Powder.
• 1 tbsp Baking Powder
• 100g red Leicester cheese, grated
• 125 ml milk
• 1 egg
• 1 tbsp crème fraîche
• 120g Spam chopped into chunks (reserving a quarter to sprinkle on top)

Instructions

STEP 1:

Grease Tray.

STEP 2:

Fry Onion In BUtter Til Soft

STEP 3:

Sift Dry Ingredents In With Cheese

STEP 4:

Beat Egg And Milk

STEP 5:

Add The Crème Fraîche.

STEP 6:

Add The Milk Mixture And Dry Ingredients Together

STEP 7:

Fold In The Onion And Three Quarters Of Spam.

STEP 8:

Fill Six Muffin Cases With The Spammy MIxture

STEP 9:

Slap Some Spam On Top To Make It Look Hot.

STEP 10:

Chuck In The Oven For 20 Minutes.
