Ingredients
- The trick for chewyness is half brown sugar, half caster :)
- I dont really measure ingredients but i have tried to put it into 'cups'. the 'cup' i use is like a normal thin-ish mug size.
- *1/2 cup brown sugar
- *1/2 cup caster sugar
- *1/2 cup butter (softened block butter or lurpack are best, doesnt really matter though)
- *1 egg
- *teaspoon vanilla essence
- *1 cup plain flour (i doubt it'd matter if you used self-raising)
- *a pinch of salt
- Optional:
- *1/2 cup of choc chips or chopped nuts (macadamia nuts are lush)
Method
Oven: 180*c or gas 4
*mix butter and sugars
*add egg, vanilla, choc chips/chopped nuts
*then mix in flour & salt
*consistency should be half way between doughy and sloppy
*put blobs onto baking sheet and into oven
*should take about 7mins.. Or longer, depending on how big your blobs were
*cookies are sloppy when first taken out of the oven, then they harden when cooling, these are tasty eaten about 10mins after taken out of the oven usually :)
if you have mixture left over, just put cling film around it in the fridge and cook it the next day... You could probably even freeze it. Another thing you could do is thaw some icecream a bit and mix in blobs of refrigerated cookie dough, put it back in the freezer and tadaa cookie dough ice cream!

I've tried these cookies with gluten free flour and xanthum gum, and they came delicious. I've also tried another lot with some peanut butter and they were yummy. They are really good that they are addictive.

It says at the top, i used a mug. Although seeing as everything is measured in cups, you could use any size really as the ratio will still be the same :) thanks for all the comments :d

Quick, easy and simple, with no fuss what so ever, the consistency just right . The only problem i had was the cooking time, i ended up needing 15 to 18 minuites but now i know so no probs next time round, i will defo be making these again. :d
