Potatoes (about 4 pots to 2 onions for 1 peep)
Onions
bacon (2-4 slices - streaky is best)
little oil
Boiling water
salt and pepper
Frying pan
Peel potatoes and cut into med sized cubes. Peel onions and roughly chop. Fry bacon in a little oil until juice comes out and it is crispy. Remove bacon from the pan. Add potatoes and onion and mix in hot fat. Pour boiling water over pots and onion till it almost covers them, add plenty of salt an black pepper - cover (with foil or a large plate) and simmer 'til pots are soft and the mix is thick. Add bacon in pieces and stir in. Delicious with thick buttered bread!
