Mexican Tomato Soup

Ingredients

  • 1 tin of tomatoes or pasata
  • 1 onion - chopped
  • 1/2 red pepper chopped into small squares
  • 1/2 green pepper chipped into small squares
  • 1-2 chilli's diced
  • 1 small tin kidney beans

Method

If using tinned tomatoes - puree by using a blender. (pasata is ready made tomato juice in bottles)
fry onion, chilli & peppers, add kidney beans and tomato juice, bring to boil, simmer for 5-10 mins.
