Potato And Garlic Soup
- 500g potatoes
- 5 cloves garlic
- 1 pint veg stock
- Bit of butter
- Cheese for on top (optional)
- Serves 2
The amounts may not be exact because i dont really measure stuff i just add till it tastes good.
Peel and very finely chop the garlic (in you have a garlic crusher then it is even better)
fry in pan for a little while till browned and soft.
Dice potatoes and add to garlic pour over stock and boil till potatoes are soft.
Add a bit of butter and mash potatoes untill creamy (mash in stock, dont pour out)
great on a cold day served with warm crusty bread
