5-Ingredient Lemon Chicken Recipe

This 5-Ingredient lemon chicken recipe is a staple for me all school year. It is budget-friendly, simple, healthy, and delicious.

Ingredients
- 1 lb thinly sliced chicken breast
- 5 cloves of garlic
- 1/2 cup olive oil
- 1 tablespoon thyme
- 2 lemons
- salt and pepper to taste
Instructions
Start by mincing garlic and adding it to a medium bowl
Add olive oil and thyme to the bowl, whisk
Squeeze the juice of 1 lemon into the bowl, whisk
Slice the other lemon into thin slices and set aside
Pour the mixture into a gallon-sized freezer bag to prep for marination
Add lemon slices, chicken breasts, salt, and pepper to the freezer bag
Close the bag and lay it flat against your counter space. Massage marinade into the chicken until evenly coated.
Place into the refrigerator for at least 1 hour and up to 24 hours
Once the chicken has finished marinating place a skillet on the stove on medium heat
Carefully lay the chicken breasts across the skillet and pour the entire marinade on top
Cook each side of the chicken for 3-4 minutes depending on the thickness.

This 5-ingredient lemon chicken recipe has a very simple flavor so it is great for picky eaters. Not that simple means flavorless or bad, the lemon in this recipe really shines and makes this dish bright and fresh. If you wanted to add a little kick to this you could add a teaspoon of crushed red pepper flakes to the marinade, but if I make this at school I usually omit the crushed red pepper because my roommates aren’t fans of spice.
I used a cast iron skillet for this recipe, but you could use a regular saute pan if you don’t have a cast iron skillet around. My favorite cast iron is the Le Creuset Signature Enameled Cast Iron Skillet Fry Pan. My food never sticks to it and it comes in the prettiest colors to match any kitchen.
