Creamy Garlic Parmesan Pasta

Ingredients

  • 1 cup dry pasta (such as penne, fettuccine, or your preferred type)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • ¼ teaspoon red pepper flakes (optional, for a hint of heat)
  • 1 tablespoon chopped fresh parsley or basil (optional, for garnish)

Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
    • Reserve about ½ cup of the pasta cooking water, then drain the pasta.
  2. Prepare the Sauce:
    • In a large skillet over medium heat, melt the butter.
    • Add the minced garlic and sauté for about 1 minute, until fragrant.
  3. Add Cream and Cheese:
    • Pour in the heavy cream and bring to a gentle simmer.
    • Stir in the grated Parmesan cheese until it melts and the sauce becomes smooth.
    • If the sauce is too thick, add some of the reserved pasta water, a little at a time, until the desired consistency is reached.
  4. Season:
    • Add salt, black pepper, and red pepper flakes (if using) to taste.
  5. Combine Pasta and Sauce:
    • Add the cooked pasta to the skillet, tossing to coat it evenly with the sauce.
    • Cook for an additional 1-2 minutes to allow the pasta to absorb some of the sauce.
  6. Serve:
    • Garnish with chopped fresh parsley or basil, if desired.
    • Serve immediately.

Instructions

  1. In a microwave bowl, mix about 2 tablespoons of the mayonnaise, about a tablespoon of milk, a pinch of salt, garlic pepper, mixed herbs and the sweetcorn and mix well. Now add the pasta.

  2. One thing to note is that you can change the amounts of mayo and milk according to your taste, but make sure its not too thick, such that the pasta is coated but it doesn’t stick to it.

  3. Finally add the grated cheese on top and microwave for 1 min on full power.

Other things to try:

  • For added flavor, sauté vegetables like mushrooms, spinach, or cherry tomatoes.
  • For extra protein, add grilled chicken, shrimp, or crispy bacon.
  • For a lighter version, substitute half of the heavy cream with milk.
