This 5-Ingredient lemon chicken recipe is my go to weeknight meal when I am at school. I will prep the marinade in the morning and leave the chicken in the fridge all day while I am at class. By the time I get home, the chicken is perfectly marinated and I can get dinner on the table in 10 minutes.

The ingredients in this five-ingredient lemon chicken recipe are so simple and basic that you’re sure to always have them in your kitchen. On days when I have no idea what to make for dinner this is always a great fallback option. Last year at school I lived with three other girls, and we would eat this five-ingredient lemon chicken recipe at least once a week. The flavors are so fresh and bright nobody ever got sick of it and we all said we could eat this every day.

My favorite thing about this 5-ingredient lemon chicken recipe is that it is great for you. There are not a ton of ingredients and all of the ingredients are healthy. If you wanted a little bit of an extra protein boost you could add a 1/2 cup of Greek yogurt to the marinade. I think this 5-ingredient lemon chicken recipe tastes great with and without the addition of Greek yogurt so I usually include it if I have some, but if I don’t it is just as good without.

This 5-ingredient lemon chicken recipe has a very simple flavor so it is great for picky eaters. Not that simple means flavorless or bad, the lemon in this recipe really shines and makes this dish bright and fresh. If you wanted to add a little kick to this you could add a teaspoon of crushed red pepper flakes to the marinade, but if I make this at school I usually omit the crushed red pepper because my roommates aren’t fans of spice.

I used a cast iron skillet for this recipe, but you could use a regular saute pan if you don’t have a cast iron skillet around. My favorite cast iron is the Le Creuset Signature Enameled Cast Iron Skillet Fry Pan. My food never sticks to it and it comes in the prettiest colors to match any kitchen.
