1. Put the cherry tomatoes into a saucepan on medium heat and add a generous glug of olive oil

2. Finely chop garlic and add to the pot

3. Pick a small handful of basil leaves and add

6. After approx. 10 minutes the tomatoes will have burst, forming a rich sauce

7. Use as a base to whatever you like and add a sprig of basil for decoration

This goes well as a pasta sauce, on bruschetta (or toast), with brown rice, or as a base on pizza, in casseroles- I can’t think of anything that wouldn’t work. As an example I stirred in 3 tablespoons of brown rice, some cooked tiger prawns and a handful of spinach leaves. Just chuck in whatever veg and meat you have in your fridge!

Variations include adding a dash of wine, frying a little chorizo with the tomatoes, or stirring in a little cream off the heat to turn into cream of tomato soup.

NB Using cherry tomatoes opposed to normal tomatoes and using good olive oil opposed to any other makes a big difference and you can tell exactly when the sauce is ready. It’s healthy, cheap and unbelievably simple! Works fine in the oven too.
