Ingredients
- 3 peppers (red, yellow, orange)
- 1 cucumber
- 5 spring onions
- 6 to 8 tomatoes
- big glug olive oil
- big glug white wine vinegar
- oregano to sprinkle (if preferred)
Instructions
First glug the olive oil and vinegar into a big bowl so that theres a nice amount in the bottom of the bowl.
Finely chop the tomatoes and when adding them to the bowl make sure you get all the juices and seeds in.
Season tomatoes with salt and a bit of pepper.
With all the rest of ingredients finely chop them and throw them in with the rest, I like to peel half of my cucumber before putting it in as it makes the dish more colourful.
Once everything is in, mix it altogether and taste – I tend to add more vinegar as I like mine with a kick.
Cling film up and then leave in the fridge for a couple of hours before serving.
Great with salmon, burgers, or just on its own with a crusty roll!
