Step 1:

  • First glug the olive oil and vinegar into a big bowl so that theres a nice amount in the bottom of the bowl.
  • Step 2:

  • Finely chop the tomatoes and when adding them to the bowl make sure you get all the juices and seeds in.
  • Step 3:

  • Season tomatoes with salt and a bit of pepper.
  • Step 4:

  • With all the rest of ingredients finely chop them and throw them in with the rest, I like to peel half of my cucumber before putting it in as it makes the dish more colourful.
  • Step 5:

  • Once everything is in, mix it altogether and taste – I tend to add more vinegar as I like mine with a kick.

  • Cling film up and then leave in the fridge for a couple of hours before serving.

  • Great with salmon, burgers, or just on its own with a crusty roll!
