One of the quickest and easiest lunches or snacks you can make is air fryer quesadillas. They’re crispy folded tortillas packed with whatever ingredients you like. In this recipe, we use spicy chorizo, tender shredded chicken, and plenty of gooey melted cheese. This combination is big on flavor and takes just a little longer than making a sandwich or wrap.

The air fryer turns the outside golden and crisp without much oil or fuss. Better still, these quesadillas are incredibly easy to customize, so you can add peppers, onions, beans, or whatever your family loves. Check out the ingredients and cooking steps below.

Chicken Chorizo Quesadillas Ingredients

  • 4 large 8-inch flour tortillas
  • 2 cups of cooked shredded chicken
  • 4 oz of chorizo, casing removed
  • 1 1/2 cups of shredded Mexican cheese blend or cheddar jack cheese
  • 1/2 cup of shredded cheddar cheese
  • 1/3 cup of salsa
  • 1/4 cup of finely diced red onion
  • 1/4 cup of finely diced red bell pepper
  • 1 tablespoon of chopped fresh cilantro
  • 1/2 teaspoon of taco seasoning
  • 1 tablespoon of melted butter or olive oil
  • Cooking spray
  • Sour cream and guacamole for serving

Chicken Chorizo Quesadillas Instructions

  1. Add the chorizo to a small skillet over medium heat and cook for 5 minutes, breaking it up as it browns.
  2. In a bowl, mix the pre-cooked shredded chicken, cooked chorizo, salsa, red onion, bell pepper, cilantro, and taco seasoning.
  3. Lay the tortillas flat. Add cheese to one half of each tortilla.
  4. Spoon the chicken and chorizo filling over the cheese. Add a little more cheese on top so the quesadilla holds together as it melts.
  5. Fold each tortilla in half and press down gently.
  6. Brush the outside with melted butter and lightly spray the air fryer basket with cooking spray.
  7. Place the quesadillas in the air fryer in a single layer.
  8. Set the air fryer to 375°F for 5 minutes. Cook in batches if needed.
  9. After the 5 minutes, flip and cook for another 3 minutes, until golden and crisp.
  10. Let them rest for 1 minute, then slice and serve with sour cream, salsa, and guacamole.
