Step 1: Bring chicken broth and water to a boil.
Step 2: Add rice and cook until liquid is nearly absorbed.
Step 3: In the last 10-15 minutes of cooking, add almonds.
Step 5: Serve hot, with soy sauce if desired.
Step 6: Makes 74 servings. Good for Chinese New Year parties or potlucks.
Step 8: NOTE: This recipe can be downsized for one person, and tastes just as good.
Step 9: Use 1 part water, 1 part broth, and 1 part rice.
Step 10: 1/2 cup of uncooked rice is makes one serving.
