Step 1: Begin by putting green lentils into saucepan of boiling water, bring to boil then simmer for 25-30 mins.
Step 2: Halfway through lentils cooking dice up garlic and red onion finely and place in saucepan/frying pan with nice serving of olive and saute on medium heat for about 7 mins.
Step 3: Then add in chopped red pepper and courgette and season with fresh parsley, oregano, salt and black pepper to your taste. Cook for a few minutes then add in chopped tomatoes, puree and after draining the lentils add them too. (add nice serving of red wine too if you fancy)
Step 4: Wait until it starts to boil, reduce the heat and simmer for 30-40 minutes.
Step 5: then serve with cooked spaghetti and a nice serving of parmesan (though this does contain animal rennet for those who do not fancy the stuff!)
