Amatriciana Chicken Traybake

Ingredients

  • 1 red chili
  • 3 tbsp tomato puree
  • 3 tbsp olive oil
  • 3 garlic cloves
  • 8 skinless chicken thighs
  • 500g new potato
  • 4 thyme sprigs
  • 400g baby plum tomatoes
  • salt
  • black pepper

Instructions

  1. Heat the oven to 180c.

  2. Add chicken to a large roasting tin.

  3. Halve the chili, and put it in a food processor with tomato puree, olive oil, and garlic. Whizz to a paste, and then spread over the chicken.

  4. Add the potatoes to the tin with a good grinding of black pepper and some salt.

  5. Mix everything together, add the thyme, and roast for 30 minutes.

  6. Add the tomatoes for 15 minutes until the tomatoes have softened and the chicken is cooked.
