Step 1:

  • Heat the oven to 180c.
  • Step 2:

  • Add chicken to a large roasting tin.
  • Step 3:

  • Halve the chili, and put it in a food processor with tomato puree, olive oil, and garlic. Whizz to a paste, and then spread over the chicken.
  • Step 4:

  • Add the potatoes to the tin with a good grinding of black pepper and some salt.
  • Step 5:

  • Mix everything together, add the thyme, and roast for 30 minutes.
  • Step 6:

  • Add the tomatoes for 15 minutes until the tomatoes have softened and the chicken is cooked.
