Ingredients

  • 200g self-raising flour
  • 75g butter
  • 75g sugar
  • 75g mixed fruits (or just raisins i use)
  • 1 egg

Instructions

  1. 1 preheat the oven 220 degrees gas mark 7

  2. 2 sieve flour into a large bowl

  3. 3 rub in butter (till bread crumbs)

  4. 4 stir in sugar and dried fruit

  5. 5 whisk egg lightly in small bowl

  6. 6 make a well in flour and add egg

  7. 7 mix to form a soft yet firm dough

  8. 8 scatter plenty of flour on tray

  9. 9 divide dough into 8 rocks

  10. 10 role in flour and place on tray

  11. 11 bake for 12-15 minutes or until golden brown and still a little squishy

  12. 12 leave to cool and harden

  13. 13 enjoy
