Ingredients
- 200g self-raising flour
- 75g butter
- 75g sugar
- 75g mixed fruits (or just raisins i use)
- 1 egg
Instructions
1 preheat the oven 220 degrees gas mark 7
2 sieve flour into a large bowl
3 rub in butter (till bread crumbs)
4 stir in sugar and dried fruit
5 whisk egg lightly in small bowl
6 make a well in flour and add egg
7 mix to form a soft yet firm dough
8 scatter plenty of flour on tray
9 divide dough into 8 rocks
10 role in flour and place on tray
11 bake for 12-15 minutes or until golden brown and still a little squishy
12 leave to cool and harden
13 enjoy
