Apricot Jam Crepes
Ideal for breakfast along with hot coffee!

milk
salt
sugar
In a bowl, beat the eggs, add the milk, and gradually add the flour (you have to avoid making flour lumps). Add the salt and sugar and mix well.

heat the frying pan and put a cube of butter in, let it melt and cover all the pan.

put 1/4 of the mix in the pan (remember, it makes 4 crepes). The crepe must not be too thick nor too thin. Cook each side for 2 or 3 minutes on low heat.

dispose each crepe on a plate, put apricot jam on one half, fold the crepe in half, the in half again, and enjoy!
