Arrabiata Pasta

Spicy tomato pasta – low fat, great taste!

Ingredients
- Serves 2
- Pasta (I think penne is best)
- 1 Large Red Pepper
- 1 Red Onion
- 2 Fresh Garlic Cloves
- Pack of Passata
- Olive Oil
- Crushed Chillies
- Cayenne Pepper
- Italian seasoning (or oregano and basil)
- Pinch of sugar
- Mozzarella (optional)
Instructions
Boil a pan of salted water and add pasta
Heat a wok/pan to a moderate heat and add chopped onions and garlic and olive oil.
Cook until onions are softened then add pepper.
Once veg is cooked at pack of passata 3/4 of a pack is sufficient. sprinkle a tiny bit of sugar into sauce – brings out tomato flavour!
Season with crushed chillis(generously) and cayenne pepper.
leave to simmer until pasta is ready – then drain the pasta and mix in with the sauce.
Take off the heat and mix in a generous amount of italian seasoning. Serve and sprinkle with grated mozzarella!
Delicious!
(i actually use this as a 1 person meal then keep the left for the next day as it still tastes great and is good for packed lunches for when you’re skint!)
