Step 1:

  • Boil a pan of salted water and add pasta
  • Step 2:

  • Heat a wok/pan to a moderate heat and add chopped onions and garlic and olive oil.
  • Step 3:

  • Cook until onions are softened then add pepper.
  • Step 4:

  • Once veg is cooked at pack of passata 3/4 of a pack is sufficient. sprinkle a tiny bit of sugar into sauce – brings out tomato flavour!
  • Step 5:

  • Season with crushed chillis(generously) and cayenne pepper.
  • Step 6:

  • leave to simmer until pasta is ready – then drain the pasta and mix in with the sauce.
  • Step 7:

  • Take off the heat and mix in a generous amount of italian seasoning. Serve and sprinkle with grated mozzarella!
