Ingredients
- I cant remember where I found this recipe, but I think its awesome.
- Its so versatile and cheap to make, really filling and good for you aswell! And it freezes so you can make a whole massive batch!
- 1 can of chopped tomatoes, any cheap version will do,
- 1 onion thinly sliced,
- 2 rashers of bacon chopped (optional)
- 150ml-200ml stock (any will do)
- 400g (roughly) tin of cannelinni beans in WATER (you can use any beans really, but cannelinni is the most popular), just remember to drain the water before you use them
- 1 teaspoon of sugar
Instructions
1. Fry the onions and bacon until soft and starting to brown in a large frying pan
2. Add the stock, tomatoes, sugar, and seasoning. Simmer for 5 mins.
3. Add the beans and simmer for another 5 minutes or until the sauce has reduced to a consistency that you are happy with. Serve! 🙂
Why not try adding a glug of ketchup or trying out different spices such as cayenne or paprika. Its great on toast or with a jacket spud. Or you could add some cooked pasta, put in an oven proof dish, top with grated cheese and stick it under a hot grill until the cheese is bubbling and brown…yummy!
