bacon, pea and mint pasta

not a recipe i created but its so good i thought id share it with you

Ingredients
- 1. smoked streaky bacon (about half a pack per person although you can use less)
- 2. fresh mint (dried doesnt work very well so try to use fresh if you can)
- 3. a lemon
- 4. 5 tablespoons of creme fraiche ( i use low fat )
- 5. frozen peas
- 6. mini shell pasta (this is meant to be used in soups and so cooks really quick. The only place ive been able to find it is sainsbury’s though. Any other pasta works just as well)
- 7. Salt and pepper (preferably freshly ground)
- 8. a handful of finely grated parmessan cheese
Instructions
1. Cook the pasta according to the packet instructions (aka in boiling witer with a little salt)
2. Finely chop the bacon and fry (you don’t need to use oil as streaky bacon already has alot of fat which will be released during cooking).
3. When the bacon has browned add the peas and cook until defrosted.
4. When the pasta is cooked through strain and add the bacon and peas.
5. stir in the creme fraiche, parmessan, the zest of the lemon, the juice of half the lemon and a handful of shreded mint leaves (dont use the stalks!)
6. Add salt and pepper to taste (remember that the bacon is salty so dont add too much salt!)
7. Serve and enjoy!
