Step 1: 1. Cook the pasta according to the packet instructions (aka in boiling witer with a little salt)
Step 2: 2. Finely chop the bacon and fry (you don’t need to use oil as streaky bacon already has alot of fat which will be released during cooking).
Step 3: 3. When the bacon has browned add the peas and cook until defrosted.
Step 4: 4. When the pasta is cooked through strain and add the bacon and peas.
Step 5: 5. stir in the creme fraiche, parmessan, the zest of the lemon, the juice of half the lemon and a handful of shreded mint leaves (dont use the stalks!)
Step 6: 6. Add salt and pepper to taste (remember that the bacon is salty so dont add too much salt!)
Step 7: 7. Serve and enjoy!
