bacon, pea and mint pasta

Instructions

Step 1:

  • 1. Cook the pasta according to the packet instructions (aka in boiling witer with a little salt)
  • Step 2:

  • 2. Finely chop the bacon and fry (you don’t need to use oil as streaky bacon already has alot of fat which will be released during cooking).
  • Step 3:

  • 3. When the bacon has browned add the peas and cook until defrosted.
  • Step 4:

  • 4. When the pasta is cooked through strain and add the bacon and peas.
  • Step 5:

  • 5. stir in the creme fraiche, parmessan, the zest of the lemon, the juice of half the lemon and a handful of shreded mint leaves (dont use the stalks!)
  • Step 6:

  • 6. Add salt and pepper to taste (remember that the bacon is salty so dont add too much salt!)
  • Step 7:

  • 7. Serve and enjoy!
