This baked risotto recipe is an easy week night meal that is perfect for college students.

Ingredients

  • 2 Tablespoons neutral oil
  • 1 onion
  • 1 tea spoon salt
  • 180g Arborio rice
  • 375ml water + a stock cube(optional)
  • 1 can tomatoes
  • 60g parmesan cheese
  • 1 pepper
  • Pan with a lid that can go in the oven (a casserole dish or non-stick is best)

Instructions

  1. On medium heat, fry a sliced onion in neutral oil for 5 min

  2. Add the rice and fry for 1 min

  3. Add the liquid and tomatoes

  4. Stir for about 5 min

  5. Top with cheese

  6. Place the lid on and pop in the oven for 30 minutes

  7. Top with fresh parsley if you have any
