Baked Risotto Recipe That’s Easy for Students

This baked risotto recipe is an easy week night meal that is perfect for college students.

Ingredients
- 2 Tablespoons neutral oil
- 1 onion
- 1 tea spoon salt
- 180g Arborio rice
- 375ml water + a stock cube(optional)
- 1 can tomatoes
- 60g parmesan cheese
- 1 pepper
- Pan with a lid that can go in the oven (a casserole dish or non-stick is best)
Instructions
On medium heat, fry a sliced onion in neutral oil for 5 min
Add the rice and fry for 1 min
Add the liquid and tomatoes
Stir for about 5 min
Top with cheese
Place the lid on and pop in the oven for 30 minutes
Top with fresh parsley if you have any
