Banana & Dried Fruit Breakfast Loaf

Ingredients

  • 150ml semi skimmed milk
  • 40ml yoghurt
  • 2 eggs, beaten
  • 3 bananas, mashed
  • 75g rolled oats
  • 300g self raising wholemeal flour (you can use white too)
  • 2 tsp. Cinnamon
  • 50g mixed dried fruits eg. Apricots, figs, sultanas
  • handful of chopped walnuts or seeds

Instructions

  1. 1) grease a baking tin and preheat the oven to 180 degrees celcius

  2. 2) mix all the liquid ingredients together in a jug

  3. 3) place all the dry ingredients in a mixing bowl then slowly pour the liquid and mix with a whisk or spatula until both mixtures are incorporated together

  4. 4) spoon into the tin and bake for 1h or until the loaf is thoroughly baked through
