Banana & Dried Fruit Breakfast Loaf

Ingredients
- 150ml semi skimmed milk
- 40ml yoghurt
- 2 eggs, beaten
- 3 bananas, mashed
- 75g rolled oats
- 300g self raising wholemeal flour (you can use white too)
- 2 tsp. Cinnamon
- 50g mixed dried fruits eg. Apricots, figs, sultanas
- handful of chopped walnuts or seeds
Instructions
1) grease a baking tin and preheat the oven to 180 degrees celcius
2) mix all the liquid ingredients together in a jug
3) place all the dry ingredients in a mixing bowl then slowly pour the liquid and mix with a whisk or spatula until both mixtures are incorporated together
4) spoon into the tin and bake for 1h or until the loaf is thoroughly baked through
