Banana Pudding Ice Cream Bar

STEP 1:

milk
vanilla

In a bowl, pour the vanilla Jell-O packet out completely and add 2 cups of milk

STEP 2:

whisk until Jell-O is completely dissolved and set aside, pudding should soft set in 5 minutes

STEP 3:

In the bowl of a stand mixer with a whisk attachment add the heavy cream and whip until soft peaks form

STEP 4:

vanilla

Add the vanilla extract and mix until just combined

STEP 5:

whipped cream

Fold the whipped cream mixture into the pudding careful not to deflate the cream completely

STEP 6:

pudding mix

Slice bananas thinly and fold them into the cream pudding mixture

STEP 7:

Add the mixture into popsicle molds and place into the freezer for 1 hour

STEP 8:

If you don’t have popsicle molds you can either pour this mixture into a baking dish to freeze and then cut the ice cream into bars or pour the ice cream into a loaf pan and scoop it like hard ice cream, both are still delicious

Remove the pops from the freezer after an hour and run the molds under warm water for about 10 seconds, just enough to loosen the mold from the banana pudding ice cream bar

I saw banana pudding ice cream bars going viral on TikTok and wanted to give them a shot myself. These were so easy to make, only a few ingredients, and unbelievably tasty.

In the instructions, I mentioned how if you don’t have popsicle molds you can do this in a loaf pan or baking dish and both are great options. I only had four popsicle molds so I put the rest of my banana pudding ice cream into a loaf pan. Once frozen I scooped it like normal ice cream and it was heavenly so do not fret if you don’t have molds they are not necessary at all. The loaf pan method is more simple, less mess, and just as good.

Another alteration you could make to this recipe could be switching out Vanilla Pudding Jell-O for the Banana Cream Pudding Jell-O. This will enhance the bananas so much and really drive home that flavor. The banana flavor already comes through pretty strongly with just the sliced bananas, but if you love that flavor definitely give this recipe a go with the Banana Cream Pudding Jell-O.

This recipe was slightly inspired by the Magnolia bakery banana pudding. I’ve made their copycat recipe a few times and it is fully worth the hype. When I saw banana pudding ice cream bars going viral on TikTok I thought about the Magnolia bakery banana pudding and thought about how I could make a variation of that into ice cream. The Magnolia Bakery recipe calls for a can of sweetened condensed milk, but I think these banana pudding ice cream bars are sweet enough with the Vanilla Jell-O and the sweetened condensed milk would make them almost sickly sweet. Their recipe also has Nilla Wafers which I think could be a fun addition to these bars.
