Beef And Rice Casserole

Great warming rice dish that’s inexpensive and easy to make. serves 2.

Ingredients
- 1/3 to 1/2 lb of minced beef
- 1 tin of cream of tomato soup
- 3 1/4 ounces of rice
- same volume of water as rice
- 1/2 tsp black pepper
- any seasonings or spices you like
- 50g grated cheese
Instructions
1. Cook the minced beef in a pot
2. When the beef is no longer pink, add the tin of tomato soup and add seasonings and pepper. (i like paprika and a mixed creole seasoning).
3. Add the rice to the soup then measure the same volume of the rice added and pour it into the mixture.
4. There are 2 options to the next step, a) transfer the mixture to a baking dish and bake in a 180 degree oven covered for 30 minutes before removing from the oven, sprinkling with cheese and returning to the oven for 5 minutes. B) leave in the pot with a lid for 25 minutes then sprinkle the cheese on top of the casserole before serving.
