Herby Roast Dinner

succulent beef and herby roast vegetables



  • a joint of topside beef.
  • 1 swede peeled and cut into chunks,
  • 2 peppers sliced,
  • 5 king edward potatoes peeled and cut into quarters,
  • 1 handful of rosemary leaves chopped very finely
  • 1 handful of thyme leaves chopped very finely
  • good glug of olive oil
  • 2 small onions


cover the beef with some olive oil adn the chopped thyme and place on a bed of roughly chopped onions one a roasting tin and place in oven at 180 degrees. cook the beef for 1 - 2 hours depending on preferences.

put the vegetables into the roasting tin and add some more olive oil and the rosemary put in oven for 1 hour.
