Shin Beef Stew

Recipe using Shin Beef for two meals!

Ingredients

  • 450g of Shin Beef cubed (Can be very cheap. Usually bought from butchers)
  • 110g can of chopped tomatoes
  • 80g Pearl Barley
  • 2 carrots chopped
  • 2 stick of celery chopped
  • 2 Potatoes chopped into small cubes
  • 2 small onions chopped small
  • 1 tblsp Parsley
  • 1 tblsp Thyme
  • 1/4 tsp Ground Cumin
  • 2 tblsp Tomato Concentrate
  • 1.2l Beef Stock
  • Salt and Pepper
  • --Next Day--
  • 1 tblsp Madras Powder
  • 1.5 tsp Cumin

Method

Add the Beefstock to the pan and get HOT

Add the beef cubes to the pan and let sit for a minute

Add all ingredients to the pan except the potatoes and let simmer for 2 hours 45 minutes

Add the potatoes and cook for a further 45 minutes

This makes a lot so next day I add the Madras and additional Cumin to make a Beef Madras. Just reheat and serve with Rice. Delicious!
