To make the tomato sauce:
heat a frying pan and add oil and an onion (it gives the meat great flavour! Brown the mince. Stir using a wooden spoon and to remove lumps and add the garlic and dried herbs.
add the mushrooms, carrots and tomato sauce (or chopped tomatoes). Mix everything together.
to make the cheese sauce:
add butter to a pan and melt. Then stir in the flour. Add the milk a little bit at a time, stirring constantly until the mixture has no lumps (remember, it's a lot easier to thin the sauce by adding more milk, but it's more difficult to thicken it up by adding too much, so go slowly!)
season with salt, pepper and oregano.
finally, add the grated cheese and fold it into the sauce.
pre-heat the oven to 180 degrees.
depending on the lasagne sheets you have, cook as instructed on the pack.
cover the bottom of the dish in meat sauce and cover in pasta sheets (be careful not to layer the sheets on top of one another or they won't cook!) and then add a layer of the cheese sauce. Continue to layer in this patter until all sauces are used.
grate some cheese on the top and then bake in the over until bubbling and golden brown.
