Ingredients

  • 1 butternut pumpkin
  • 1 small sweet potato
  • 2 carrots
  • 1 onion
  • 2 cloves of garlic
  • 1 red chilli *optional
  • 1 chicken or vegetable stock cube
  • half a teaspoon of ground nutmeg
  • dash of olive oil
  • dash of cream (to taste)
  • salt pepper

Instructions

  1. Put a big pot on the stove

  2. dice and fry the onion, chilli and garlic in oil

  3. once cooked add chopped veg to pot

  4. add hot water to the pot, water should just cover the vegetables

  5. add the stock cube

  6. bring to the boil

  7. once all the veg is soft turn the stove off

  8. blend the soup (if you dont have a blender mash the veg, lumpy soup still tastes great)

  9. now season with salt and pepper (make sure you taste as you go)

  10. now add a dash of cream

  11. the last and most important ingredient is the nutmeg, add this last, stir and serve 🙂
