Ingredients

  • 1 tsp dijon mustard or English mustard
  • 1 tsp salt
  • 2 cups dried pasta
  • 2.5 cups milk (use semi or whole milk) – More if needed
  • 1.5 cups loosely packed grated cheddar cheese

Instructions

  1. In a saucepan, add pasta and milk. (Double-check if the saucepan is larger than what’s required to prevent the milk from spilling over!)

  2. Bring to a simmer, then reduce heat to low and cook for 20 minutes, until pasta is soft, stirring frequently. Be sure the milk does not boil.

  3. Turn the heat off.

  4. Add cheese & salt.

  5. Stir to combine.

  6. Stir in the mustard a little at a time to taste.

  7. Cover and let stand for about 5 minutes, then stir again and serve.

  8. Add a tablespoon or more milk to your desired creaminess level.

  9. Gently stir.

  10. Optional: Oven Finish- Place in a baking dish and top with a generous sprinkling of cheese and bake at 200C degrees for approximately 10 minutes until the cheese has melted.

  11. Optional: Top with some crispy bacon!
