The Best Macaroni and Cheese

Absolutely Superb Mac & Cheese
Difficulty Level: easy
Ingredients
- 1 tsp dijon mustard or English mustard
- 1 tsp salt
- 2 cups dried pasta
- 2.5 cups milk (use semi or whole milk) – More if needed
- 1.5 cups loosely packed grated cheddar cheese
Instructions
In a saucepan, add pasta and milk. (Double-check if the saucepan is larger than what’s required to prevent the milk from spilling over!)
Bring to a simmer, then reduce heat to low and cook for 20 minutes, until pasta is soft, stirring frequently. Be sure the milk does not boil.
Turn the heat off.
Add cheese & salt.
Stir to combine.
Stir in the mustard a little at a time to taste.
Cover and let stand for about 5 minutes, then stir again and serve.
Add a tablespoon or more milk to your desired creaminess level.
Gently stir.
Optional: Oven Finish- Place in a baking dish and top with a generous sprinkling of cheese and bake at 200C degrees for approximately 10 minutes until the cheese has melted.
Optional: Top with some crispy bacon!
