Best Sausage Sandwich

Can’t be bothered to properly cook? just have a sausage sarnie 🙂

Ingredients

  • 2 sausages (pork & leek are the nicest!)
  • red onion chutney
  • rocket or spinach
  • a couple of cherry tomatoes
  • bread – i like to use ciabatta rolls (make them yourself! I’ll pop the link to the recipe i use in the main text.), but you can use sliced bread, baps, whatever you have.
  • haven’t got chutney? Then an onion (red is better) will do.

Instructions

  1. Heat a tiny bit of oil in a frying pan. Get it nice and hot (on my 6-heat electric one i use number 5) and pop in your sausages.

  2. cook them until they’re cooked all the way through. I usually leave them a little longer because a slightly burnt outside makes them so much better- but not too burnt!

  3. if you haven’t got any onion chutney then chop an onion (half will do) and pop it in the pan while you’re frying your sausages- you may want to add a little more oil so they don’t stick. When they’re burnt on the edges, they should be done.

  4. when your sausages are finished, cut the tomatoes in half and put them so that the cut sides faces up in the pan- they only need a few seconds to soften up and blacken on the bottom.

  5. spread a bit of chutney/put the fried onion on one half of your bread, put a bit of rocket/spinach on top, then your tomato halves and then slice your sausage lengthways and put on top.

  6. if you used an onion they you might want to add mustard or ketchup because it’ll be a little dry, but it should still be delicious!
