Braised leeks and peppers
v.v.v.v quick and easy
1. Slice the leeks into 1cm slices and cook with a dash of olive oil on a medium heat for ten minutes with the lid on.
2. Add the chopped peppers, 3tbsps of balsamic vinegar and cook for a further ten minutes without the lid.
3. Season to taste….
Serve with pretty much anything… it’s good on a jacket potato with loads of butter!
It’s also good as a snack as it’s pretty low fat.
