Slice the leeks into 1cm slices and cook with a dash of olive oil on a medium heat for ten minutes with the lid on. Step 2: 2. Add the chopped peppers, 3tbsps of balsamic vinegar and cook for a further ten minutes without the lid. Step 3: 3. Season to taste…. Step 4: Step 5: Step 6: Serve with pretty much anything… it’s good on a jacket potato with loads of butter! Step 7: It’s also good as a snack as it’s pretty low fat.
