Braised leeks and peppers

Step 1:

  • 1. Slice the leeks into 1cm slices and cook with a dash of olive oil on a medium heat for ten minutes with the lid on.
  • Step 2:

  • 2. Add the chopped peppers, 3tbsps of balsamic vinegar and cook for a further ten minutes without the lid.
  • Step 3:

  • 3. Season to taste….

  • Serve with pretty much anything… it’s good on a jacket potato with loads of butter!

  • It’s also good as a snack as it’s pretty low fat.
