Ingredients

  • 1 potato, diced
  • 1 cup cherry tomatoes, sliced in half
  • 1 cup of corn kernels
  • 2 green onions, diced (white and pale green parts only)
  • juice of one lime
  • 2-3 eggs, beaten together
  • 2 whole wheat tortillas
  • 1/2 cup grated cheese
  • olive oil for cooking
  • optional: canned black beans, fresh avocado, hot sauce

Instructions

  1. Warm a pan over a medium-low flame. When the pan is hot, add a little olive oil and the potatoes. Sprinkle with salt and pepper. Fry potatoes, stirring occasionally, until cooked through but firm, about 15-20 minutes.

  2. while the potatoes are cooking, prepare the salsa. Combine the tomatoes, corn, green onions, and lime juice. Add salt to taste and set aside.

  3. when the potatoes are done, remove from heat and set aside.

  4. reduce heat to low and add the whisked eggs. Move around until the eggs have set.

  5. heat tortillas, either in microwave or flame. Serve with cheese added on top and any other toppings you’d like 🙂
