Step 1: cut the brocolli into bitesize pieces, place in salted water and put it on to boil. Just the head, just obvs. don’t worry about the stalk.
Step 3: heat the oven to about gas mark 6 or about 180-200 degrees
Step 5: put the butter in a pan, over a medium heat, just let it melt, don’t let it bubble and burn. then mix the flour in bit by bit. you might need to take it off the heat for a sec and slowly whick the milk in, let it cook for a bit on a low heat to cook the taste of the flour out.
Step 7: mix the cheese in and add salt and pepper.
Step 9: when the brocolli is ready, drain it and mix it in with the cheese sauce.
Step 11: tip it all into an ovenproof dish and cover with a bit more cheese.
Step 13: bake for about 15-20 mins, until it looks all bubbly and delicious!
